If you cook them beyond this, they can overcook in the skillet. Be careful not to overcook: When cooking the green beans in boiling water, cook them until they are crisp-tender.Add the green beans to the skillet and toss to coat.Add garlic and almonds and toast until golden, about 1 minute. Melt butter in a 10-inch skillet over medium heat.This stops the cooking process and helps the beans stay crisp and green. The butter browns in the pan and becomes nutty and fragrant. Butter: I use 1 tablespoon of salted butter to cook the garlic and toast the almonds before adding the green beans to the pan. I use about 1 cup of green beans in this recipe. If you sauté frozen green beans, they will release a lot of water and tend to end up soggy. In a pinch, you can use frozen but I recommend either thawing frozen beans first or quickly defrosting them in hot water before sautéeing them in the pan. They hold their texture better and are able to handle the heat from cooking. Green beans: Fresh green beans are best used in this recipe.
